Expert summary
Sushi is a very famous item of Japanese cuisine. It is actually vinegared rice, usually topped with other ingredients like fish, meats, and vegetables. Outside Japan people often mistakenly assume that sushi means the fish itself or any fresh raw seafood dishes. In Japan, sliced raw fish is called ‘sashimi’ and so it refers to the sliced fish component of sushi and not the rice component. There are various kinds of sushi: sushi served rolled inside such as dried and pressed sheets of seaweed or alga, sushi made with toppings laid with hand-formed clumps of rice, toppings stuffed into a small pouch of fried tofu, and toppings served scattered over a bowl of sushi rice.Recommended content

Sushi Deluxe Book & Kit
I purchased the Sushi Deluxe Book & Kit as a gift and ended up keeping it for myself. The book is small but informative which is why I rated it a 4 instead of 5. The really amazing value is the kit. The chopsticks and accompanying dishes are very good quality. It also comes with a bamboo mat for making sushi rolls. Based upon quality and price I would recommend this item to anyone who is a novice at sushi making. -
Sushi for Dummies
I ordered and read several sushi books, including Sushi for Dummies. As a basic primer for learning how make sushi, this book can't be beat. Sushi is all about the rice, and hands down, the author has the clearest and easiest description of how to accomplish this task. It is like she is right there in your kitchen telling you exactly how to cook the rice (including soaking it beforehand, something other books neglected to mention) and what proportion of vinegar/sake to use. -
The complete book of Sushi
I own at least a dozen books on sushi and they tend to have a lot of overlap in recipes and information. I think this is one of the best and had quite a number of things which were to me new ideas. Great pictures and well organized.
